What do you get when one twin wants to make cookies and the other twin wants to make brownies? A Brookie of course. This isn’t so much a recipe but an assembly guide to making a great Brookie.
Combining brownie mix with cookie dough may have been around for years, but I’m slow to the game when it comes to desserts. I prefer savory dishes and cooking over baking, but my kids feel strongly about the sweet part of life.
I discovered the cookie/brownie combo at a Memorial Day neighborhood cook-out. Fast forward a month later, and the kids are home all day for summer vacation. They like to experiment in the kitchen, but often times argue about what to make.
So today they compromised with the Brookie. It’s chocolatey, cookie dough goodness–all baked in a muffin pan.
Do you remember the Food Network show, “Sandra Lee Semi-Homemade?” Well, I just loved her show. 🙂 I spend a lot of time making meals from scratch, but sometimes–you know–just why bother when someone has done the prep work for you. This is one of those times. Summer. Four kids in the kitchen. Easy. All arrows point to semi home-make these suckers.
Here are the ingredients you will need:
Next, prepare the muffin pan. I like to add cupcake liners and then spray with Pam Baking (made with flour) for the ultimate easy removal.
Then, prepare the brownie mix as directed on the box, and evenly distribute among the cupcake liners.
Once you are done with the brownie distribution, place one cookie square in each of the brownie batter cups. And if you’re 12, you don’t bother wiping up the brownie mix drip-age.
Then do this…
Raw eggs apparently don’t scare us! But seriously, this is one of the joys of being a kid, right?
We preheated the oven to 350 degrees and baked for 20 minutes. Let them cool in the pan for at least 10 minutes. Then remove and enjoy! Try to not eat them all at once.

- 1 Box Brownie Mix
- 1 PKG break apart cookie dough squares
- 1 egg
- 1/3 cup vegetable oil
- Preheat oven to 350 degrees.
- Prepare muffin pan by inserting greased cupcake liners.
- Prepare brownie mix as directed on the box.
- Distribute brownie mix evenly among cupcake liners.
- Break apart cookie dough squares, and place one in the middle of each cupcake liner filled with brownie mix.
- Bake for 20 minutes or until a toothpick inserted comes out clean.
- Let cool for 10 minutes.
