Dinner Meal Plan - Week of April 1-5

Happy April! I love when the seasons change because that means my menu gets a change too. We are breaking out the grill for the first time this year! Bring on the sunny weather! I stuck with all link-able recipes this week, still from Skinnytaste.

Monday: Spinach Ricotta Quiche w/ side Salad
Tuesday: Instant Pot Spaghetti w/ Meat Sauce
Wednesday: Easy Shredded Harissa Chicken
Thursday: Grilled Chicken Salad w/ Strawberries & Spinach
Friday: Cajun Shrimp In Foil

The Spinach Ricotta Quiche is one of my favorite Skinnytaste recipes. It is easy to put together, and it also makes a good “company” breakfast–if you’re trying to impress. Pair it with a salad for a complete meal. I went for easy recipes on Tuesday & Wednesday because we have sports those nights. Also, the Harissa Chicken and Cajun Shrimp are two of my husband’s favorites. He usually rolls his eyes when something says “Cajun” since he is from South Louisiana, but the Cajun Shrimp recipe seems to meet his high Cajun label standards. 🙂
