My meal plan for the week revolves around: Breakfast for Dinner, Slow Cooker Tuesday (because we have TWO soccer practices), a Salad, and a Sheet-Pan dinner. I’m also trying to incorporate more seafood into our diets…so Shrimp on Friday. All but one recipe is from the Skinnytaste website. The Petite Meatloaf Dinner is from the One and Done cookbook.

Recap on last week’s dinners: they were all winners. The kids even ate ALL their fish when we made Fish Florentine! They were reluctant at first, seafood is not their jam, but when they realized HOW GOOD it really was–not a spot of fish left in the pan. 🙂 That made my mommy heart smile. Oh, and not to mention they ate all the spinach too. The cream cheese and half&half made it a for-sure winner. So that’s my big fish story….
- The Chicken Cordon Bleu Meatballs: fancy and delicious–should have doubled the recipe
- Korean Beef Tacos: yummy, but kids kept making fun of how I say KOR-E-AN (I am from Texas)
- Chicken Tikka Masala: a favorite that’s on repeat
- Lasagna: served at my 12 year old’s birthday party–BIG HIT!
